Oolong Tea

Oolong Tea is generally referred to as "semi-oxidised" tea and is acknowledged as one of the most complicated teas to manufacture. Principally grown in China and Taiwan oolong teas are made from large leaves of the tea plant (camellia sinensis). The finished tea varies in colour from rich chestnut brown to greenish-grey. During processing the tea master may shape the leaves in different styles from long slightly twisted leaves to irregularly shaped and compressed balls. The flavours of quality oolong tea are complex and richly rewarding. They can range from peach to sandalwood. The leaves can be infused multiple time as the large leaves open and release their aromatic oils.
