White Tea is the rarest and least processed of all teas. Depending on the particular style of white tea it will be made up entirely of the new growth and bud (silver needle style) from the tea plant or a mix of bud and open leaf (white peony style). Like Green Tea it is unoxidised with the buds and leaf withered and air dried producing a light, clean and slightly sweet cup of tea. White varieties include Bai Mu Dan, Fujian Silver Needle and Tribute Eyebrow. When brewed they give a very pale, champagne-coloured liquor that has a very light, soft, sweet, velvety flavour.
